  • 1¼ cups canned pumpkin puree

  • ¼ cup milk
  • Maple extract
  • ½ cup finely chopped pecan or walnuts
  • 3 tablespoons brown sugar (packed)
  • ¼ cup all-purpose flour
  • ¾ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 2 tablespoons unsalted butter (melted)
  • 1 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. For the topping, mix chopped nuts, brown sugar, flour, cinnamon, salt, and melted butter until crumbly; set aside.
  3. In a bowl, whisk together flour, baking powder, baking soda, spices, and salt.
  4. In another bowl, beat eggs and sugar until fluffy; add oil, pumpkin puree, milk, and maple extract.
  5. Gradually fold dry ingredients into the wet mixture until just combined.
  6. Pour half the batter into the pan and sprinkle half the topping; repeat with remaining batter and topping.
  7. Bake for about 50 minutes or until a toothpick inserted comes out clean.
  8. Cool slightly before drizzling with glaze made from powdered sugar mixed with milk and maple extract.
