2 lbs. chicken breast
1 cup full fat Greek yogurt
3 Tablespoons extra virgin olive oil
4 garlic cloves, finely grated or minced
Juice of 1 lemon
1 Tablespoon tomato paste
1 teaspoon paprika
1 teaspoon kosher salt
1 teaspoon dried oregano or thyme
Fresh cracked pepper
2 Tablespoons extra virgin olive oil
½ medium yellow or white onion, chopped
2 cups Basmati rice
3 cups chicken broth
Kosher salt
1 large cucumber, chopped
4 roma tomatoes or 2 large beefsteak tomatoes, chopped
1 Tablespoon extra virgin olive oil
½ cup loosely packed mint or parsley, chopped
Kosher salt and fresh cracked pepper
4 slices naan or pita bread
8 oz. hummus
Instructions
In a large bowl, combine Greek yogurt, olive oil, garlic, lemon juice, tomato paste, paprika, salt, oregano (or thyme), and pepper to create the marinade.
Cut chicken into cubes and mix into the marinade until coated. Cover and marinate for at least 30 minutes.
In a pot over medium heat, warm olive oil and sauté chopped onion until translucent. Add Basmati rice to coat before pouring in chicken broth and salt. Bring to a boil then reduce heat to low and simmer until cooked.
Thread marinated chicken onto skewers and grill over medium-high heat for 10-15 minutes until cooked through.
Fluff rice with a fork; serve in bowls topped with chicken skewers, cucumber, tomatoes, olive oil drizzle, and herbs.
