- 1 pound boneless, skinless chicken breast or thighs
- 1 tablespoon olive oil
- 1 medium onion
- 2 medium garlic cloves
- 1 bunch kale
- ½ cup vegetable broth
- ¼ cup sundried tomatoes in olive oil
- 2.5 cups cooked rice (jasmine or basmati)
- Cut the chicken into 1-inch pieces and mix with olive oil, garlic powder, salt, and Italian seasoning.
- Preheat a skillet over medium-high heat and cook the chicken until golden brown and cooked through (8-10 minutes).
- Remove the chicken from the skillet; lower heat to medium, add chopped onion and garlic, cooking until soft.
