  • 1 pound boneless, skinless chicken breast or thighs
  • 1 tablespoon olive oil
  • 1 medium onion
  • 2 medium garlic cloves
  • 1 bunch kale
  • ½ cup vegetable broth
  • ¼ cup sundried tomatoes in olive oil
  • 2.5 cups cooked rice (jasmine or basmati)

Instructions

  1. Cut the chicken into 1-inch pieces and mix with olive oil, garlic powder, salt, and Italian seasoning.
  2. Preheat a skillet over medium-high heat and cook the chicken until golden brown and cooked through (8-10 minutes).
  3. Remove the chicken from the skillet; lower heat to medium, add chopped onion and garlic, cooking until soft.
  4. Stir in chopped kale and vegetable broth; cook until kale wilts.
