  • 2 tbsp lemon juice + zest
  • 2 garlic cloves
  • 1 cup Persian cucumbers, chopped
  • 1 cup cherry tomatoes, chopped
  • 1 cup red bell pepper, chopped
  • 1/4 cup red onion, diced
  • 2 tbsp parsley, chopped (or mint, basil, dill, etc.)
  • 1/2 cup feta cheese, crumbled (optional)
  • 1 lemon, juice
  • Salt and pepper to taste
  • 1/2 cup tzatziki sauce
  • 8 whole wheat pitas

Instructions

  1. Marinate the chicken: In a bowl, mix olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper. Add chicken chunks and marinate for at least 15 minutes.
  2. Prepare the salsa: Combine chopped cucumbers, cherry tomatoes, bell pepper, red onion, parsley (or herbs of choice), feta cheese (optional), lemon juice, salt, and pepper in a bowl.
  3. Cook the chicken: Heat a skillet over medium-high heat and cook marinated chicken for about 3-5 minutes on each side until golden brown and cooked through.
