6 cups chopped romaine lettuce
1 cup chopped grape tomatoes
1 large cucumber (diced)
1/4 cup diced red onion
1 cup cooked quinoa
2 cooked chicken breasts (diced)
1/2 cup pepperoncini
1/3 cup feta cheese
1/3 cup olive oil
3 tablespoons apple cider vinegar
1 1/2 teaspoons dijon mustard
Juice from 1 lemon
2 teaspoons minced garlic
3/4 teaspoon dried oregano
1/2 teaspoon salt
1/2 teaspoon black pepper
Instructions
Wash and chop the romaine lettuce into bite-sized pieces and add it to a large mixing bowl.
Dice the grape tomatoes, cucumber, red onion, cooked quinoa, and chicken. Add these ingredients to the bowl along with pepperoncini and feta cheese if desired.
In a separate bowl or salad shaker, whisk together olive oil, apple cider vinegar, Dijon mustard, lemon juice, minced garlic, oregano, salt, and black pepper until well combined.
Pour the dressing over the salad mixture and toss gently until everything is coated evenly.
Serve immediately or allow it to sit for a few minutes for flavors to meld.
