  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 3 cups chicken broth or water
  • 1 1/2 cups couscous
  • 1 teaspoon olive oil
  • 1/2 teaspoon salt
  • 1/2 cup hummus
  • 4 cups arugula
  • 1 cup cherry tomatoes, halved
  • 1 cup diced cucumber
  • 1/4 cup kalamata olives, pitted and halved
  • 1/4 red onion, diced
  • 1/4 cup feta cheese
  • 1/4 cup fresh parsley, minced

Instructions

  1. To prepare the marinade, mix olive oil, lemon juice, garlic powder, dried oregano, and salt in a bowl. Coat the chicken breasts and let them sit for at least 5 minutes.
  2. Cook couscous by boiling chicken broth or water with olive oil and salt. Stir in couscous, cover, and let it sit for 5 minutes before fluffing with a fork.
  3. In a skillet over medium heat, cook the marinated chicken for 5-6 minutes per side until cooked through (internal temperature should reach 165°F). Let rest before slicing.
  4. Assemble each bowl by dividing couscous among containers and topping with arugula, cherry tomatoes, cucumber, red onion, olives, sliced chicken, hummus, and optional feta cheese.
