  • 12 ounces dry pasta (farfalle recommended)
  • 1 English cucumber, diced
  • 1 pint cherry tomatoes, halved
  • 2/3 cup sliced kalamata olives
  • 4 ounces crumbled feta cheese
  • 1 medium red onion, thinly sliced
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons apple cider vinegar
  • 1 tablespoon freshly-squeezed lemon juice
  • 2 teaspoons dried oregano, minced
  • 1 teaspoon honey
  • 2 small garlic cloves, minced
  • 1/4 teaspoon freshly-cracked black pepper
  • 1/4 teaspoon salt
  • pinch of crushed red pepper flakes

Instructions

  1. Cook the Pasta: Bring salted water to a boil and cook pasta according to package directions until al dente. Drain and rinse under cold water.
  2. Prepare the Vegetables: Dice the cucumber, halve the tomatoes, slice the olives and red onion.
  3. Make the Dressing: In a bowl, whisk olive oil, apple cider vinegar, lemon juice, oregano, honey, minced garlic, black pepper, salt and red pepper flakes.
  4. Combine Ingredients: In a large bowl, mix cooked pasta with chopped vegetables. Pour over dressing and toss gently until well combined.
  5. Chill and Serve: Refrigerate for at least 30 minutes before serving for enhanced flavor.
