Ingredients

  • 1 lb. flank steak (or NY strip/sirloin)
  • 1 pint grape or cherry tomatoes
  • ½ medium red onion
  • 2 tsp oil (avocado or olive oil)
  • 1 head romaine lettuce
  • 1 large cucumber
  • ⅓ cup pitted Kalamata olives
  • 1 cup garlic hummus
  • ½ cup crumbled feta cheese (omit for dairy-free option)
  • 1 cup plain yogurt
  • 1 Tbsp olive oil
  • Juice of ½ lemon
  • 1 large clove garlic, finely minced
  • ½ tsp dried oregano
  • ½ tsp dried dill
  • ½ tsp salt
  • 2 tsp chopped fresh mint (or ½ tsp dried mint)

Instructions

  1. Combine all herbed-yogurt dressing ingredients in a bowl; whisk well.
  2. Preheat grill to high heat (450℉).
  3. Pat flank steak dry and season with salt and pepper.
  4. Thread cherry tomatoes and onion onto skewers; brush with oil and season.
  5. Grill steak for about 4-5 minutes per side for medium-rare; grill veggies for 5-8 minutes until tender.
  6. Let steak rest for 10 minutes before slicing.
  7. Assemble bowls with chopped romaine, sliced steak, grilled veggies, hummus, cucumber, olives, and feta.
  8. Drizzle with dressing and garnish with lemon wedges or mint.
