  • 5 guajillo peppers
  • 23 chiles de arbol (optional, for spicier)
  • 1 tablespoon olive oil
  • 1 large white onion (chopped)
  • 3 large tomatoes (chopped)
  • 5 cloves garlic (chopped)
  • 1 tablespoon dried Mexican oregano
  • 1 tablespoon sea salt (or to taste)
  • 1 teaspoon cinnamon
  • 1 teaspoon cumin
  • 1 teaspoon ground ginger
  • 1 teaspoon black pepper
  • ½ cup apple cider vinegar
  • 2 large roasted tomatoes (chopped)
  • 4 cups beef stock (separated)
  • 3.5 pounds lamb shoulder (or beef shank or chuck roast)

Instructions

  1. Prepare the Sauce: Toast dried peppers in a pan until darkened slightly. Soak them in hot water for about 20 minutes.
  2. Sauté Aromatics: In the same pan, sauté chopped onion and tomatoes in olive oil for about 5 minutes, then add garlic.
  3. Blend: Combine sautéed vegetables with soaked peppers, spices, and one cup of beef stock in a blender until smooth.
  4. Marinate: Cut the lamb into chunks and coat with the blended sauce. Marinate for at least 2 hours or overnight.
  5. Cook: In a pot, combine marinated meat, chopped roasted tomatoes, and remaining beef stock. Simmer on medium heat for about three hours until tender.
  6. Serve: Enjoy as soup or shred the meat for tacos—don’t forget to ladle some broth!
