  • 12 large eggs (hard-boiled and peeled)
  • 1 ripe avocado (mashed)
  • 3 tbsp mayonnaise
  • 2 tbsp Mexican crema (or Greek yogurt)
  • 1 jalapeño pepper (finely diced)
  • 2 tbsp lime juice (freshly squeezed)
  • 2 tbsp fresh cilantro (chopped)
  • 1 tsp ground cumin
  • 0.5 tsp chili powder
  • 0.5 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Boil eggs in water for about 12 minutes. Transfer to an ice bath to cool.
  2. Peel cooled eggs, halve them lengthwise, and remove yolks into a bowl.
  3. Mash yolks with avocado until smooth; mix in mayonnaise, crema, jalapeño, lime juice, cilantro, spices, salt, and pepper.
  4. Fill egg whites with the mixture using a spoon or piping bag.
  5. Garnish with smoked paprika, cilantro leaves, jalapeño slices, and lime wedges.
  6. Chill in the fridge for at least 30 minutes before serving.
