  • 1/2 cup unsalted butter (melted)
  • 12 ounces dark chocolate (finely chopped)
  • 1 and 3/4 cups heavy cream
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon fine sea salt

Instructions

  1. Prepare the crust by crushing the cookies into fine crumbs and mixing with melted butter. Press firmly into the bottom of a deep dish pie pan.
  2. For the filling, melt the chopped chocolate using a heatproof bowl over simmering water or in short bursts in the microwave; allow to cool slightly.
  3. In a separate bowl, whip heavy cream until soft peaks form. Fold in cooled chocolate, vanilla extract, and sea salt gently until combined.
  4. Pour the filling into the prepared crust and spread evenly. Chill in the refrigerator for at least four hours or overnight.
  5. Before serving, whip additional cold heavy cream with confectioners' sugar until stiff peaks form; spread over chilled pie.
