  • 1 lb Ground Beef (or ground turkey or chicken)
  • 3 medium Potatoes (peeled and diced)
  • 1 medium Onion (chopped)
  • 1 bell pepper (chopped)
  • 2 cloves Garlic (minced)
  • 1 tsp Paprika
  • 1/2 tsp Onion Powder
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 1 cup Beef Broth (or chicken broth)
  • 1 cup Cheddar Cheese (shredded)
  • 1 tbsp Olive Oil (for cooking)

Instructions

  1. Heat olive oil in a skillet over medium heat. Add diced potatoes and cook for 8-10 minutes until softened and lightly browned. Remove from skillet and set aside.
  2. In the same skillet, sauté chopped onion and bell pepper for 3-4 minutes until softened.
  3. Add ground meat to the skillet, breaking it apart as it cooks until browned. Drain excess fat if needed.
  4. Stir in paprika, onion powder, garlic powder, salt, and pepper; cook for an additional few minutes.
  5. Return potatoes to the skillet with beef broth; cover and simmer for about 5 minutes until potatoes are tender.
  6. Sprinkle cheese over the top; cover again and cook for another 2-3 minutes until melted.
