  • 1 packet ranch seasoning mix
  • 2 cups milk
  • 2 cups chicken broth
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 2 cups baby spinach
  • 1/2 cup roasted red peppers, chopped

Instructions

  1. In a large skillet over medium-high heat, heat olive oil and brown the sliced chicken sausage until golden on both sides. Remove and set aside.
  2. In the same skillet, melt butter and sauté minced garlic until fragrant.
  3. Add chicken broth and milk, scraping up any browned bits from the pan. Stir in ranch seasoning and bring to a gentle simmer.
  4. Add rotini pasta and cover the pan; cook for about 12–15 minutes until al dente.
  5. Lower the heat and gradually stir in shredded white cheddar until melted.
  6. Fold in baby spinach and roasted red peppers, allowing spinach to wilt slightly.
  7. Return the browned sausage to the skillet; season with salt and pepper before serving.
