  • 4 skinless salmon fillets
  • 1 cup dry orzo pasta
  • 3 cups low sodium chicken broth
  • 5 ounces baby spinach
  • Juice from 1/2 lemon
  • 1/2 cup grated Parmesan cheese
  • 1 yellow onion (finely chopped)
  • 3 garlic cloves (minced)
  • 1 tablespoon olive oil
  • 1 teaspoon unsalted butter
  • 1 teaspoon salt (divided)
  • 1 teaspoon coarsely ground black pepper (divided)
  • 1 teaspoon sweet paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme

Instructions

  1. Pat the salmon fillets dry and season with half of the salt, pepper, paprika, and garlic powder.
  2. In a large nonstick skillet over medium-high heat, heat olive oil and butter until shimmering. Sear the salmon for about 3–4 minutes per side until golden brown. Remove from the skillet and set aside.
  3. In the same skillet, add chopped onion and minced garlic; sauté until softened.
  4. Stir in dried thyme, remaining salt, pepper, and orzo. Toast for about 1 minute.
  5. Add chicken broth and bring to a boil. Reduce heat and simmer until orzo is almost al dente.
  6. Stir in spinach and lemon juice; cook for an additional 2 minutes until spinach wilts.
  7. Add grated Parmesan cheese; stir gently until melted and creamy.
  8. Return salmon to the skillet; simmer for an additional 2–3 minutes to warm through.
