  • 1 lb ground beef (or ground chicken)
  • 2 tbsp coconut oil
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1 small thumb ginger, grated
  • 1 cup carrots, shredded
  • 1 green cabbage, sliced into strips
  • 6 cups chicken broth
  • 2 tbsp coconut aminos
  • 1 tbsp rice vinegar (or lime juice for AIP)

Instructions

  1. In a large pot over medium heat, brown the ground beef until cooked through. Season with salt and pepper. Set aside and drain excess fat.
  2. In the same pot, melt coconut oil and sauté onion, garlic, and ginger for about four minutes until softened.
  3. Stir in shredded carrots and sliced cabbage; cook for another few minutes.
  4. Add chicken broth, cooked meat, and coconut aminos; bring to boil then reduce to simmer for about 20–25 minutes until cabbage wilts.
  5. Finish with rice vinegar; taste and adjust seasoning as needed. Serve hot garnished with chopped green onions.
