  • 2 tablespoons (28ml) olive oil
  • 1/4 teaspoon crushed red pepper flakes
  • 3 large cloves of garlic (finely minced)
  • 1 pint juicy cherry tomatoes (sliced in half)
  • 1/4 cup (57ml) white grape juice (add an extra 1/4 cup for a saucier sauce)
  • 1/2 cup fresh basil (finely chopped)
  • 2 tablespoons (28ml) fresh lemon juice
  • 1/2 teaspoon fresh lemon zest
  • 1/2 teaspoon salt (more to taste)
  • 1 teaspoon granulated sugar
  • 1/4 teaspoon fresh ground black pepper (more to taste)
  • 2 tablespoons (28ml) olive oil
  • 1 and 1/2 pounds fresh cod (cut into 4 fillets)
  • Salt and pepper

Instructions

  1. Heat olive oil in a skillet over medium heat. Add crushed red pepper flakes and minced garlic; sauté until fragrant (about 30 seconds).
  2. Add halved cherry tomatoes, white grape juice, salt, sugar, and black pepper. Simmer for 5-7 minutes until tomatoes soften.
  3. Stir in fresh basil, lemon juice, and lemon zest; remove from heat.
  4. In another skillet, heat olive oil over medium-high heat. Season cod fillets with salt and pepper and sear for 3-4 minutes on each side until golden brown and flaky.
  5. Serve cod topped with the tomato basil sauce.
