  • 3/4 cup cornstarch
  • 1/3 cup all-purpose flour
  • 1/2 cup white distilled vinegar
  • 1/2 cup cane sugar
  • 1/4 cup soy sauce (or coconut liquid aminos)
  • 1 Tbsp orange juice concentrate
  • 1 Tbsp sunflower oil (or any neutral flavored oil)
  • 1 1/2 tsp salt
  • 1 tsp pepper
  • 1/2 tsp crushed red pepper flakes
  • 2 cloves garlic (crushed)
  • 1/2 tsp zested ginger root (peeled)
  • 1 Tbsp cornstarch
  • 1 tsp sesame oil
  • 1 tsp rice apple vinegar (or apple cider vinegar)

Instructions

  1. Cut the chicken into bite-sized pieces. In one bowl, whisk together the egg, sunflower oil, salt, and pepper. In another bowl, combine cornstarch and flour.
  2. Dip each chicken piece in the egg mixture, then coat in the cornstarch mixture.
  3. Heat oil in a deep pan over medium-high heat. Fry the chicken pieces until golden brown (about 5 minutes per batch) and drain on paper towels.
  4. For the sauce, combine vinegar, sugar, water, soy sauce, red pepper flakes, garlic, ginger zest, orange juice concentrate, cornstarch, sesame oil, and rice apple vinegar in a separate pan over medium heat. Stir until thickened (5-7 minutes).
  5. Toss the fried chicken in the sauce until well coated. Serve over steamed rice or with fresh veggies.
