  • lb chicken breast
  • 2 Tbsp olive oil (divided)
  • 2 garlic cloves (minced, divided)
  • ⅓ cup grated parmesan cheese
  • ⅓ cup breadcrumbs
  • 2 lb red potatoes (cut into bite-sized pieces)
  • 1 lb fresh green beans (trimmed)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425°F.
  2. Toss potatoes with 1 Tbsp olive oil, 1 minced garlic clove, salt, and pepper. Spread on one-third of a lined sheet pan and bake for 10–15 minutes.
  3. In the same bowl, coat chicken with remaining olive oil, parmesan, breadcrumbs, cracked pepper, and salt.
  4. Add chicken next to the potatoes on the sheet pan.
  5. Toss green beans with remaining garlic, olive oil, salt, and pepper; place around the chicken.
  6. Bake everything for about 25 minutes until chicken reaches an internal temperature of 165°F.
