  • 1 stick butter (1/2 cup)
  • 2 lbs red potatoes (washed)
  • 1/3 cup grated Parmesan cheese
  • 3 tablespoons herb seasoning (divided)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Nonstick cooking spray

Instructions

  1. Preheat your oven to 400°F (200°C) and melt the butter in a 9×13 baking pan.
  2. While the butter melts, cut the washed red potatoes in half and score each half slightly.
  3. In a bowl, combine grated Parmesan cheese with 2 tablespoons of herb seasoning, salt, and pepper.
  4. Once the butter has melted, sprinkle the seasoning mixture over it in the pan and place the potato halves cut side down on top.
  5. Spray the tops of each potato half with nonstick cooking spray and sprinkle with remaining herb seasoning.
  6. Bake uncovered for about 40 minutes or until tender when pierced with a fork.
