  • 1 ¼ cup dried brown or green lentils
  • 1 ¼ cup short pasta shapes (like ditalini or elbows)
  • 5 cups vegetable or chicken broth
  • 8 cherry tomatoes, halved
  • 1 tablespoon olive oil
  • 2 garlic cloves, minced
  • 1 small onion, diced
  • 1 tablespoon tomato paste
  • ¼ teaspoon ground cumin
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the diced onion and sauté for about 5 minutes until soft.
  2. Stir in minced garlic and halved cherry tomatoes; cook for an additional minute.
  3. Add rinsed lentils, cumin, tomato paste, broth, and black pepper. Bring to a simmer, then cover and let it cook for about 20-25 minutes until lentils are tender.
  4. Taste the stew and adjust seasoning as needed. Stir in your choice of short pasta.
  5. Cook gently over medium heat until pasta is al dente. If too thick, add a splash of broth.
  6. Serve hot with a drizzle of olive oil and freshly cracked black pepper.
