  • 2/3 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 1/4 cups cold unsalted butter, cut into small cubes
  • 1/4 cup brown sugar, preferably dark
  • 1 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 5 cups pitted, peeled, and chopped peaches (about 78 peaches)
  • 6 tablespoons heavy cream
  • 1/2 teaspoon vanilla extract (optional)

Instructions

  1. Preheat your oven to 350°F (180°C) and prepare a 9×13-inch pan by greasing it or lining it with parchment paper.
  2. In a food processor, combine 2 ½ cups flour, 2/3 cup granulated sugar, and ½ teaspoon salt. Add 1 ¼ cups cold unsalted butter and pulse until crumbly. Set aside 1½ cups for topping.
  3. Press the remaining mixture into the bottom of the prepared pan and bake for 15 minutes or until golden brown.
  4. For the topping, mix reserved crumbs with ¼ cup brown sugar until clumps form.
  5. In another bowl, toss together 5 cups chopped peaches, 1 cup granulated sugar, ¼ cup flour, ½ teaspoon cinnamon, and a pinch of salt.
  6. Mix in 6 tablespoons heavy cream (and vanilla if using). Pour peach mixture over the crust and sprinkle with topping.
  7. Bake for an additional 45 minutes until bubbling and golden brown.
  8. Let cool completely before cutting into squares.
