  • 1 cup crunchy or creamy peanut butter
  • 1/2 cup butter
  • 1 package rainbow miniature vegan marshmallows (250g)
  • 1 tsp vanilla extract

  1. Prepare an 8×8 pan by lining it with parchment paper and placing the vegan marshmallows in the freezer.
  2. In a medium saucepan over low heat, melt the butterscotch chips, peanut butter, and butter until smooth.
  3. Remove from heat and let cool slightly before folding in the vanilla extract and frozen vegan marshmallows.
  4. Pour the mixture into the prepared pan and spread evenly.
  5. Chill in the refrigerator for about one hour until firm.
