  • 3 (8-oz.) blocks cream cheese
  • 1 c. brown sugar
  • 3 large eggs
  • 1/4 c. sour cream
  • 1 sleeve graham crackers
  • 4 tbsp. butter (for topping)
  • 1 3/4 c. chopped pecans

Instructions

  1. Preheat oven to 325ºF and grease an 8" or 9" springform pan.
  2. Beat cream cheese and brown sugar in a bowl until smooth. Add eggs one at a time, then mix in sour cream, flour, vanilla extract, and salt.
  3. Combine graham cracker crumbs, melted butter, brown sugar, and salt; press into the bottom of the prepared pan.
  4. Pour cheesecake filling over the crust and bake for about 1 hour and 30 minutes until slightly jiggly in the center.
  5. Let cool slowly in the oven before refrigerating for at least five hours or overnight.
  6. In a skillet, melt butter with brown sugar; add cinnamon, heavy cream, and pecans to create the topping.
  7. Spoon topping over chilled cheesecake before serving.
