2 large boneless, skinless chicken breasts
1 cup fresh basil pesto (store-bought or homemade)
4 pieces of flatbread (store-bought or homemade)
1 cup shredded mozzarella cheese
1/2 cup cherry tomatoes, halved
1/4 cup grated Parmesan cheese
2 tablespoons olive oil
Salt and pepper, to taste
Instructions
Preheat your oven to 400°F (200°C).
Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat and sear the chicken for about 6-7 minutes per side until golden brown.
Remove chicken from the skillet and let it rest for 5 minutes before slicing into thin strips.
Spread basil pesto on each flatbread, then top with sliced chicken, shredded mozzarella, and halved cherry tomatoes.
Sprinkle grated Parmesan on top and bake for 10-12 minutes until melted and edges are golden brown.
For extra crispiness, broil for an additional minute if desired.
