  • 1 (8-ounce) can crushed pineapple (drained)
  • 3 cups grated carrots (lightly packed)
  • 3/4 cup chopped walnuts (optional)
  • For frosting: 8-ounce cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two round cake pans.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, spices, and salt.
