  • 2 tbsp fresh lime juice
  • 1 tbsp honey or maple syrup
  • 1 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp red pepper flakes (optional)

Instructions

  1. Dice 2 cups of fresh pineapple and 1 large English cucumber into bite-sized pieces.
  2. Thinly slice ¼ small red onion and 1 small jalapeño, if desired.
  3. Chop ¼ cup of fresh cilantro.
  4. In a bowl, whisk together 2 tablespoons of lime juice, 1 tablespoon of honey (or maple syrup), 1 tablespoon of olive oil, ½ teaspoon of salt, and ¼ teaspoon of black pepper.
