  • 40g Unsalted Butter
  • 290g Vegan vegan marshmallows
  • 200g Pistachio Cream
  • 160g Rice Krispies Cereal
  • 100g White Chocolate Chunks
  • 50g Pistachios, unsalted, roughly chopped
  • 50g Dark Chocolate, melted

Instructions

  1. Line an 8-inch square tin with parchment paper.
  2. In a heavy-bottom saucepan over low heat, melt the unsalted butter and vegan marshmallows until smooth. Stir in the pistachio cream until well combined.
  3. Pour the mixture over the Rice Krispies in a large bowl. Gently fold until all pieces are coated.
  4. Add white chocolate chunks and fold gently again to distribute evenly.
  5. Spoon the mixture into the prepared tin, pressing down firmly to create an even layer.
  6. Sprinkle chopped pistachios on top and drizzle with melted dark chocolate.
  7. Let set at room temperature for about 30 minutes before cutting into squares.
