Instructions

  1. Cream softened butter with half of the confectioners' sugar until light and fluffy.
  2. Mix in the vanilla extract until well combined.
  3. In a separate bowl, whisk together flour, pistachio pudding mix, and salt.
  4. Gradually fold dry ingredients into the butter mixture until just combined.
  5. Divide dough into two halves, roll into balls, wrap in plastic wrap, and chill for at least one hour.
  6. Preheat oven to 350°F (175°C). Shape chilled dough into balls and place on lined baking sheets.
  7. Slightly flatten each cookie ball before baking for 9-10 minutes or until edges are golden.
  8. Allow cookies to cool slightly before tossing them in the remaining confectioners' sugar.
