  • 1 medium onion, freshly grated
  • 4 medium potatoes, grated and drained well
  • 3 fresh eggs
  • 4 tablespoons all-purpose flour
  • Sea salt and freshly ground black pepper to taste
  • Olive oil for pan-frying
  • 6 ripe tomatoes, diced
  • 150g fresh mozzarella cheese, shredded
  • Fresh dill, chopped

Instructions

  1. In a large mixing bowl, combine grated onion and potatoes. Add eggs, flour, salt, and pepper; mix until well combined.
  2. Heat olive oil in a non-stick pan over medium heat. Drop spoonfuls of the potato mixture into the pan to form pancakes. Cook for about 2 minutes per side until golden brown.
  3. While pancakes cook, mix diced tomatoes with fresh dill and half of the shredded mozzarella in a separate bowl.
  4. Preheat the oven to 200°C (400°F). Place pancakes on a baking sheet, top with tomato mixture and remaining mozzarella. Bake for 15 minutes.
  5. Serve warm, garnished with extra dill if desired.
