  • 2 cups sharp cheddar, shredded
  • ½ cup sour cream
  • ½ tsp garlic powder
  • ½ tsp smoked paprika (+ extra for coating)
  • ¼ tsp onion powder
  • Salt & pepper, to taste
  • 1 cup crushed cheese crackers or finely chopped pecans (for coating)
  • 1 pretzel rod or bell pepper stem (for decoration)

Instructions

  1. In a medium bowl, beat together cream cheese, cheddar cheese, sour cream, garlic powder, smoked paprika, onion powder, salt, and pepper until smooth.
  2. Scoop the mixture onto plastic wrap and shape it into a ball. Wrap tightly and chill in the refrigerator for at least 2 hours or overnight.
  3. Once chilled, roll the cheese ball in crushed crackers or nuts until fully coated.
  4. Use twine or spaghetti noodles to create ridges around the ball for a pumpkin-like appearance.
  5. Insert a pretzel rod or bell pepper stem on top as the pumpkin's stem.
  6. Allow to sit at room temperature for 15–20 minutes before serving with an assortment of crackers or fresh veggies.
