  • 1 cup walnuts, finely chopped
  • 1 cup almond flour
  • 1/2 cup white sugar
  • 1/4 cup salted butter, melted
  • 6 oz pumpkin puree (not pie filling)
  • 2/3 cup white sugar
  • 2 eggs
  • 2 (8 oz) cream cheese, room temperature
  • 1 tsp pumpkin spice
  • 1/2 tsp cinnamon
  • 1/3 cup brown sugar
  • 1/4 cup oats
  • 1/2 cup flour
  • 6 T salted butter, softened
  • 1 tsp vanilla

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper.
  2. In a bowl, mix walnuts, almond flour, sugar, and melted butter for the crust; press into the baking dish.
  3. Blend cream cheese and sugar until smooth; add eggs one at a time. Pour half over the crust.
  4. Mix remaining cream cheese mixture with pumpkin puree and spices; spoon over the first layer.
  5. Prepare streusel topping by mixing sugars, oats, flour, butter, and vanilla; sprinkle on top.
  6. Bake for 60-70 minutes until set but slightly jiggly in the center. Chill completely before serving.
