  • 2 Tbsp granulated sugar
  • 1/4 tsp salt
  • 1/4 tsp cinnamon
  • 1/8 tsp ginger
  • 1/8 tsp nutmeg
  • 1 1/2 cups whole milk
  • 1/2 cup pumpkin puree
  • 3 large eggs
  • 3 Tbsp unsalted butter (melted, plus more for the pan)
  • 1 tsp vanilla extract
  • 8 oz cream cheese (softened)
  • 1/2 cup confectioners' sugar
  • 3 Tbsp maple syrup
  • 1 cup heavy cream

Instructions

  1. In a blender, combine all crepe ingredients until smooth. Let it rest for at least 30 minutes.
  2. Preheat a nonstick skillet over medium heat and lightly coat it with butter.
  3. Pour about ¼ cup of batter into the pan, swirling to coat evenly. Cook for about 1 to 1½ minutes until golden, then flip and cook for another minute.
  4. Spread the maple cream cheese filling on each warm crepe, fold gently, and serve.
