  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 1/2 cups pumpkin puree
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup milk
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 3/4 teaspoon salt
  • For the filling: 8 ounces cream cheese, softened
  • 3/4 cup heavy cream
  • 1/4 cup maple syrup
  • 1/2 cup granulated sugar (for topping)
  • 1 teaspoon cinnamon (for topping)
  • 1 tablespoon unsalted butter, melted

Instructions

  1. Preheat oven to 350°F (175°C). Grease a muffin tin.
  2. In a large bowl, whisk together vegetable oil, granulated sugar, brown sugar, pumpkin puree, eggs, vanilla extract, and milk until well combined.
  3. In another bowl, sift together flour, baking soda, cinnamon, cloves, and salt. Gradually mix dry ingredients into wet ingredients until just combined.
  4. Fill each muffin cup three-quarters full with batter.
  5. Mix granulated sugar and cinnamon for topping and sprinkle over batter before baking.
  6. Bake for about 20-25 minutes or until a toothpick comes out clean.
  7. While cooling, whip heavy cream until soft peaks form; mix in softened cream cheese and maple syrup until smooth.
  8. Once cooled slightly, carve out centers of muffins and fill with cream cheese mixture.
