  • ½ cup brown sugar packed
  • 1 large egg yolk (room temperature)
  • 1 teaspoon vanilla extract
  • ⅓ cup coarse sugar for rolling
  • 1 large egg (room temperature)
  • ¼ cup brown sugar
  • pinch table salt
  • ½ teaspoon pumpkin spice
  • ¼ cup whole milk
  • ½ cup pumpkin puree
  • ¼ teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F and line a cookie sheet with parchment paper.
  2. In a large bowl, beat cream cheese and butter until creamy. Add granulated and brown sugars, mixing well. Stir in egg yolk and vanilla extract.
  3. Sift together flour, pumpkin spice, and salt; gradually add to wet mixture until combined.
  4. Roll dough into 2-tablespoon balls and coat in coarse sugar.
  5. In another bowl, whisk together egg, brown sugar, salt, pumpkin spice, milk, pumpkin puree, and vanilla until smooth.
  6. Make an indentation in half of the dough balls on the baking sheet and spoon filling into each.
  7. Bake for about 15 minutes until edges are golden but centers remain soft.
