  • 1 pound salmon fillet
  • 12 oz rigatoni (or your preferred pasta)
  • 4 cups baby spinach leaves
  • 1/2 cup Greek yogurt
  • 2 teaspoons dried dill
  • Zest of one lemon
  • Fresh lemon juice
  • 1/4 teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F. Place the salmon skin-side down on a lined baking sheet and season with dill, lemon zest, salt, and pepper. Bake for about 7-10 minutes until opaque and flaky.
  2. While the salmon bakes, cook the pasta according to package instructions until al dente. Reserve one cup of pasta water before draining.
  3. Return drained pasta to the pot over low heat, adding spinach until wilted (about one minute). Stir in Greek yogurt, lemon juice, and red pepper flakes. Use reserved pasta water to achieve desired sauce consistency.
  4. Gently fold in chunks of baked salmon until everything is well-coated with sauce. Serve immediately.
