  • 2.5 to 3-pound spaghetti squash
  • 1 pound large raw shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 5 ounces fresh baby spinach
  • 3 tablespoons salted butter
  • Juice of 1/2 lemon
  • Low-sodium vegetable stock

Instructions

  1. Preheat oven to 400°F (200°C). Cut the spaghetti squash in half, deseed, and roast cut-side down on a baking sheet for about 30-35 minutes until tender.
  2. In a skillet over medium heat, melt 1 tablespoon of butter. Sauté minced garlic and red pepper flakes until fragrant. Add shrimp, seasoning with salt and pepper; cook until pink (3-4 minutes).
  3. Stir in remaining butter, spinach, vegetable stock, and lemon juice until spinach wilts (about 2 minutes). Fluff roasted spaghetti squash with a fork and combine with shrimp mixture.
