  • 2 packs instant ramen noodles (discard seasoning packet)
  • 1/2 cup sliced almonds
  • 2 tablespoons sesame seeds
  • 1/4 cup soy sauce
  • 1/4 cup rice vinegar
  • 2 tablespoons sesame oil
  • 1 tablespoon sugar (or honey)
  • 1 clove garlic (minced)

Instructions

  1. Prep the vegetables: Thinly slice the cabbage, shred the carrots, and slice the green onions.
  2. Toast the ramen noodles: In a skillet over medium heat, toast broken ramen pieces until golden brown and crispy. Set aside.
  3. Make the dressing: Whisk together soy sauce, rice vinegar, sesame oil, sugar or honey, minced garlic, and grated ginger in a bowl.
  4. Combine ingredients: In a large mixing bowl, mix together cabbage, carrots, green onions, toasted ramen noodles, almonds, and sesame seeds. Pour dressing over top and toss gently until well combined.
  5. Chill: Cover and refrigerate for at least 30 minutes to meld flavors before serving.
