  • 1 cup fresh or frozen raspberries
  • 1/4 cup sugar
  • 1 teaspoon lemon juice
  • 1/4 cup water
  • 16 ounces mascarpone cheese
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon freshly grated lemon zest
  • 1 cup whipping cream
  • 1/4 cup sugar
  • 2 packages ladyfingers
  • 1 cup lemon curd
  • About 2 pints of raspberries for garnish

Instructions

  1. In a saucepan, combine raspberries, sugar, lemon juice, and water. Simmer until the mixture thickens. Blend if desired and let cool.
  2. Whip cream with sugar until soft peaks form. In a separate bowl, mix mascarpone cheese with vanilla and lemon zest until smooth.
  3. Fold whipped cream into the mascarpone mixture gently.
  4. Layer half of the ladyfingers in an 8×8 inch dish. Add half of the raspberry puree, half of the mascarpone mixture, half of the lemon curd, and some fresh raspberries.
  5. Repeat layers with remaining ingredients.
  6. Cover and refrigerate for at least three hours before serving.
