  • 1 cup fresh raspberries (or frozen)
  • 2 ripe peaches, pitted and sliced
  • 1 cup freshly squeezed lemon juice (about 46 lemons)
  • 1 cup granulated sugar (or honey)
  • 4 cups water (still or sparkling)
  • Ice cubes for serving
  • Fresh mint leaves for garnish

Instructions

  1. Rinse raspberries under cold water. Slice peaches into thin wedges.
  2. In a blender, combine raspberries, peach slices, and 1/4 cup water. Blend until smooth. Optional: strain to remove seeds for a silkier texture.
  3. In a large pitcher, mix the fruit puree with freshly squeezed lemon juice and sugar (or honey), stirring until fully dissolved.
  4. Gradually add the remaining water while stirring to combine all ingredients well.
  5. Chill in the refrigerator for at least 30 minutes before serving.
  6. Serve over ice and garnish with fresh mint leaves.
