  • 3 cups reduced sodium beef stock
  • 3 sprigs fresh thyme
  • 2.25 lbs boneless beef chuck (cut into 2-inch cubes)
  • 2 tablespoons flour
  • 2 tablespoons tomato paste
  • 1 lb baby potatoes (halved if large)
  • 1 large yellow onion (diced)
  • 4 carrots (cut into chunks)
  • 0.5 cup dry apple vinegar
  • Salt and black pepper to taste
  • Olive oil for sautéing
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat. Sear the seasoned beef cubes until browned on all sides; remove and set aside.
  2. In the same pot, sauté diced onions and minced garlic until translucent.
  3. Add tomato paste and flour; cook for another minute.
  4. Deglaze with apple vinegar, scraping up brown bits from the pot.
  5. Return beef to the pot along with baby potatoes, carrots, thyme, bay leaf, salt, pepper, and beef stock.
  6. Bring to a boil, then reduce heat to low and simmer for about 2 hours until beef is tender.
