  • 3 tablespoons olive oil (divided)
  • 4 minced garlic cloves (divided)
  • Salt and black pepper to taste
  • 8 ounces ricotta cheese
  • 1 bunch fresh basil (divided)
  • 1 crusty bread loaf
  • Balsamic glaze for drizzling

Instructions

  1. Preheat oven to 400ºF. In a baking dish, combine cherry tomatoes with 1 tablespoon olive oil, 2 minced garlic cloves, salt, and pepper. Roast for about 20 minutes until charred.
  2. In a blender, mix ricotta, 1 minced garlic clove, 1 tablespoon olive oil, half a cup of basil leaves, salt, and pepper until smooth. Chill.
  3. Slice bread into twelve half-inch pieces. Brush with remaining olive oil and sprinkle with salt/pepper. Toast in the oven for 10-12 minutes until golden.
  4. Assemble by spreading the ricotta mixture on each toasted slice and topping with roasted tomatoes. Garnish with fresh basil and drizzle balsamic glaze before serving.
