1 whole chicken (4–5 lbs)
2 tbsp salt (divided)
1/2 cup white grape juice or chicken stock
1 lb baby potatoes
1 lb carrots
4 tbsp olive oil
1 1/2 sticks softened butter
4 cloves garlic (minced)
1 tbsp Bayou City All Purpose Seasoning or Creole seasoning
1 tsp smoked paprika
1 tsp cayenne (optional)
1 tsp onion powder
1 lemon (zest)
1 tbsp rosemary (chopped)
2 sprigs rosemary
4 sprigs thyme
2 sprigs sage
Instructions
Preheat oven to 425°F (220°C).
Season chicken with 1 tbsp salt; pat dry.
Mix softened butter, garlic, seasonings, and lemon zest in a bowl.
Rub the garlic butter all over the chicken and stuff the cavity with herbs and half an onion.
Toss potatoes and carrots in olive oil and remaining seasonings; place in roasting pan with grape juice or stock.
Position chicken on a rack over vegetables; roast for about 1 hour and 30 minutes until internal temperature reaches 165°F (75°C), basting every 30 minutes.
Let rest for 10-15 minutes before carving.
