  • 89 medium starchy potatoes
  • 1 head of garlic
  • 1 cup heavy cream
  • 1/4 cup whole milk
  • 1 tablespoon unsalted butter
  • Fresh thyme leaves
  • Nutmeg
  • Grated parmesan cheese
  • Shredded Gruyère or mozzarella cheese
  • Salt and pepper

Instructions

  1. Preheat oven to 375°F (190°C). Roast the garlic by cutting off the top, wrapping it in foil, and baking until soft.
  2. Grease a baking dish. Thinly slice the potatoes using a mandoline for even cooking.
  3. Layer potato slices upright in the baking dish.
  4. In a saucepan, combine heavy cream, milk, butter, half of the parmesan, thyme, nutmeg, salt, and pepper over medium heat.
  5. Squeeze the roasted garlic into a paste and mix it into the creamy mixture.
  6. Pour the creamy mixture over layered potatoes and cover with foil.
  7. Bake covered for 40 minutes until potatoes are tender.
  8. Remove foil, add remaining cheeses on top, and bake uncovered for an additional 30 minutes until golden brown.
  9. Allow to cool slightly before serving.
