  • 1 whole chicken (45 pounds)
  • 2 tablespoons olive oil
  • 1 tablespoon garlic, minced
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • Zest and juice of 2 large oranges
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • Salt and pepper to taste
  • 1 small onion, quartered
  • 1 cup chicken broth

Instructions

  1. Prepare the marinade by mixing olive oil, minced garlic, thyme, rosemary, orange zest and juice, honey, soy sauce, salt, and pepper in a bowl.
  2. Place the chicken in a resealable bag or shallow dish and pour the marinade over it. Ensure it's well-coated and let it marinate in the refrigerator for at least one hour (overnight is better).
  3. Preheat your oven to 375°F (190°C).
  4. In a roasting pan, place the marinated chicken with quartered onion around it. Pour chicken broth into the pan.
  5. Roast in the preheated oven for about 1 hour and 15 minutes or until golden brown and cooked through. Baste occasionally.
  6. Let it rest for 10-15 minutes before carving.
