- 12 ounces pasta (spaghetti or your choice)
- 2 cups cherry tomatoes, halved
- 4 cloves garlic, unpeeled
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh basil, chopped
- Zest of 1 lemon & juice of 1/2 lemon
- Preheat oven to 400°F (200°C).
- On a baking sheet, combine halved cherry tomatoes and unpeeled garlic cloves. Drizzle with olive oil and sprinkle with salt.
- Roast for 20-25 minutes until tomatoes are blistered and garlic is soft.
- Cook pasta according to package instructions until al dente; reserve 1 cup pasta water before draining.
- Squeeze roasted garlic into a mixing bowl; add ricotta, Parmesan, lemon zest, and juice. Mix until smooth.
- Combine cooked pasta with ricotta mixture; add reserved pasta water gradually for desired creaminess.
- Gently fold in roasted tomatoes and chopped basil.
- Serve immediately with additional Parmesan if desired.
