  • 12 ounces pasta (spaghetti or your choice)
  • 2 cups cherry tomatoes, halved
  • 4 cloves garlic, unpeeled
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped
  • Zest of 1 lemon & juice of 1/2 lemon

Instructions

  1. Preheat oven to 400°F (200°C).
  2. On a baking sheet, combine halved cherry tomatoes and unpeeled garlic cloves. Drizzle with olive oil and sprinkle with salt.
  3. Roast for 20-25 minutes until tomatoes are blistered and garlic is soft.
  4. Cook pasta according to package instructions until al dente; reserve 1 cup pasta water before draining.
  5. Squeeze roasted garlic into a mixing bowl; add ricotta, Parmesan, lemon zest, and juice. Mix until smooth.
  6. Combine cooked pasta with ricotta mixture; add reserved pasta water gradually for desired creaminess.
  7. Gently fold in roasted tomatoes and chopped basil.
  8. Serve immediately with additional Parmesan if desired.
