  • 2 salmon filets (46 oz each)
  • ½ lb asparagus, ends trimmed
  • 1 lb baby potatoes, quartered
  • 3 tbsp olive oil
  • Juice of 1 lemon
  • ½ tbsp dijon mustard
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp paprika
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 400°F and line a baking sheet with parchment paper.
  2. Toss quartered potatoes with 2 tablespoons of olive oil and half the seasoning mix. Spread them on one side of the baking sheet.
  3. Bake potatoes for 8 minutes.
  4. Brush salmon with dijon mustard, season with salt and pepper.
  5. After 8 minutes, push potatoes aside and place salmon and asparagus on the sheet. Drizzle with remaining olive oil and seasoning.
  6. Bake for an additional 15-20 minutes until salmon is cooked through and potatoes are tender.
