  • 3 large eggs

  • 1/2 cup sour cream
  • 3 medium apples, peeled and diced
  • 2 tablespoons unsalted butter
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup granulated sugar
  • 6 tablespoons unsalted butter, cubed
  • 1/2 cup heavy cream
  • 1 teaspoon sea salt

Instructions

  1. Preheat oven to 325°F (163°C) and grease a 9-inch springform pan.
  2. Mix graham cracker crumbs, sugar, and melted butter; press into the bottom of the pan and bake for 10 minutes.
  3. Beat softened cream cheese until smooth, then add sugar and eggs gradually. Mix in vanilla extract and sour cream.
  4. Pour filling over crust; bake in a water bath for approximately 55-65 minutes until slightly jiggly.
  5. Cool cheesecake in oven with door ajar for an hour, then refrigerate for at least four hours.
  6. Cook diced apples with butter, brown sugar, cinnamon, and nutmeg until soft; let cool.
  7. Prepare salted caramel sauce by melting sugar until amber, then adding butter and cream while whisking; stir in sea salt.
