  • 3 large garlic cloves (minced)
  • 2 tablespoons oil (for frying, divided)
  • 28 ounces coleslaw mix (2 bags)
  • 1 tablespoon brown sugar
  • 1/4 cup soy sauce
  • 1 tablespoon rice vinegar
  • 1 cup edamame (thawed)
  • 1/3 cup green onion (finely chopped)

Instructions

  1. Preheat a large skillet over medium heat and add 1 tablespoon of oil. Cook shrimp for 3-4 minutes until opaque, then set aside.
  2. In the same skillet, add another tablespoon of oil along with the onion and garlic. Sauté for about 3-4 minutes until fragrant.
  3. Add coleslaw mix, brown sugar, soy sauce, and rice vinegar; stir-fry for 1-2 minutes until slightly wilted.
