  • 2 garlic cloves, minced
  • 1 small onion, finely chopped
  • 1 stalk celery, diced
  • 2 tablespoons all-purpose flour
  • 1½ cups seafood stock (or chicken stock)
  • ½ cup heavy cream
  • ½ pound shrimp, peeled and deveined
  • ½ pound cooked lobster meat, chopped
  • 1 tablespoon chopped fresh parsley
  • 1 cup all-purpose flour (for biscuit topping)
  • 1 teaspoon baking powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt (for biscuit topping)
  • 2 tablespoons cold butter, grated
  • ½ cup shredded sharp cheddar cheese
  • ⅓ cup whole milk (plus 1 tablespoon if needed)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a saucepan, melt butter over medium heat. Sauté garlic, onion, and celery until softened.
  3. Stir in flour, then gradually add seafood stock and heavy cream; cook until thickened.
  4. Fold in shrimp and lobster; season with Old Bay seasoning, salt, and pepper.
  5. In a separate bowl, combine biscuit ingredients: flour, baking powder, garlic powder, salt; cut in cold butter until crumbly. Stir in cheese and milk to form dough.
  6. Spoon seafood mixture into ramekins or a baking dish. Drop biscuit dough on top.
  7. Bake for 20-25 minutes until biscuits are golden brown.
