- 8 oz uncooked rotini or penne pasta
- 2 romaine hearts
- Chopped rotisserie chicken or diced chicken breast
- 3/4 cup mayonnaise
- 2 tsp dijon mustard
- 2 tbsp fresh lemon juice
- 2 tsp Worcestershire sauce (non-alcoholic)
- 2 tsp minced garlic
- 1/3 cup finely grated parmesan cheese
- Cook pasta in boiling water until al dente; drain and cool.
- In a bowl, whisk together mayonnaise, dijon mustard, lemon juice, Worcestershire sauce, minced garlic, and parmesan cheese to make the dressing.
- In a large bowl, combine cooled pasta, chopped romaine hearts, and diced chicken. Pour the dressing over the top and toss gently until well coated.
- Serve immediately with optional croutons and extra parmesan cheese for garnish.
